Provence rosé is the reference for the pale, dry, delicate style: barely-there salmon-pink, crisp and fresh, with gentle red-berry, citrus and floral notes. It is a style, not a grape — usually a blend of Grenache, Cinsault, Syrah, Mourvèdre and Rolle (Vermentino) — and, crucially, it is made like a white wine: reductively, cool, and with as little colour and phenolic extraction as possible.
The defining decision is how the pink is made and how much of it there is. Direct pressing of whole or crushed red grapes gives the palest, most delicate wine; a brief cold skin maceration gives a little more colour, aroma and texture. From there, protective, white-wine handling preserves the fragile colour and aromatics. The dial runs from pale and delicate to a deeper, more textured rosé.

How this style is made
Viticulture for a rosé
The best Provence rosé comes from fruit grown and picked for the purpose — for fresh acidity and delicate aromatics rather than deep colour and ripeness. Mediterranean varieties (Grenache, Cinsault, Syrah, Mourvèdre, Rolle) are blended for balance.
Picking earlier than for a red keeps the acidity and finesse the pale style depends on.
Ripeness window and harvest
Pick at roughly 20–22 °Brix, keeping acidity high, and cool the fruit in. The aim is aromatic freshness, not sugar or colour.
Sound, cool fruit protects both the delicate aromatics and the pale colour target.
The colour decision — direct press vs maceration
This is the central lever. Direct pressing (pressurage direct) of whole or lightly-crushed red grapes, taking only the palest juice, gives the most delicate, palest wine. A brief cold skin maceration of a few hours draws a little more colour, aroma and texture. Saignée — bleeding pale juice off a red-wine tank — gives a deeper rosé and is more a by-product than the premium Provence route.

Pressing
Press gently on a pneumatic press under inert gas, protecting the juice from oxygen and phenolic pick-up, and keep the press fractions separate — later fractions carry more colour and phenolics.
Blending press fractions is another fine control on colour and texture.
Settling and enzymes
Cold-settle to a moderate clarity and handle reductively, exactly as for an aromatic white. A pectolytic clarification enzyme is optional; if used, prefer one low in cinnamyl-esterase to protect against volatile phenols.
The goal is a clean, bright, protected juice.
Yeast and cool fermentation
Choose an aromatic-preserving strain — sometimes a thiol-releasing one to lift a citrus/tropical note — and ferment cool (14–17 °C), as for a white, to keep the delicacy and the pale colour.
A warm ferment would coarsen the aromatics and deepen the colour, away from the style.
No malolactic
Malolactic is blocked to keep the crisp, fresh acidity that defines Provence rosé.
Keep SO₂ and temperature managed so it does not start on its own.
Oxygen and colour management
Oxygen is the enemy: it browns the delicate pink and dulls the aromatics, so handle reductively throughout — inert cover, closed transfers, minimal pick-up. Where a paler colour is wanted, a light fining (for example PVPP) can remove some phenolics and pink, though minimal extraction upstream is always the better route.
Protecting the colour and aromatics is the same discipline as making a thiol white.
Stabilisation, texture and bottling
Stabilise protein with bentonite and tartrate by cold or CMC. A little lees ageing can add texture to a premium cuvée, though most Provence rosé is made fresh and clean.
Bottle protectively and young — often in the distinctive clear bottle — under screwcap or cork, to be drunk fresh.

Frequently asked questions
How is pale Provence rosé made — is red wine blended with white?
No. Still rosé is made from red grapes with minimal skin contact — direct pressing or a short maceration — not by blending red and white wine (which is only allowed for sparkling rosé such as Champagne). The pale colour comes from extracting as little as possible.
What is the difference between direct press, maceration and saignée?
Direct pressing takes pale juice straight from pressing red grapes, for the palest wine. A short skin maceration draws a little more colour and aroma. Saignée bleeds pale juice off a red-wine fermentation, giving a deeper rosé as a by-product — less typical of the pale Provence style.
Why is oxygen such a problem for rosé?

Does rosé go through malolactic fermentation?
