Nebbiolo — Barolo Style Winemaking Protocol
Pale but ferocious — tar, rose and red cherry over towering tannin and acidity, matured long in large Slavonian oak or, in the modern style, French barriques.
Barolo is one of the great structural reds: pale garnet in colour yet enormous in tannin and acidity, perfumed with the paradoxical "tar and roses", and legally aged at least 38 months. The whole craft is taming that structure — extracting and then softening towering tannin without stripping the perfume — and giving the wine the years it needs.
The defining fork is traditional versus modern. The traditional style uses long macerations and long ageing in large, old Slavonian oak casks (botti); the modern style uses shorter macerations, sometimes rotofermenters, and French barriques with some new oak for a rounder, fruitier, earlier-drinking wine. How this style is made
Viticulture for late ripeness
Nebbiolo ripens very late — often into late October — and is exacting about site, favouring calcareous marl soils and the best-exposed slopes (the named crus, or sorì). It is naturally low in anthocyanin, so colour is always pale.
The vineyard target is full phenolic ripeness with acidity intact, because unripe Nebbiolo tannin is brutal.
Ripeness window and harvest
Full phenolic ripeness is essential — the tannins must be ripe or the wine is impossibly astringent — so pick around 23–25 °Brix while the high acidity is retained.
Sugar ripeness and tannin ripeness must line up, which in a late, marginal ripener is the vintage's defining gamble.
Destemming and crushing
Nebbiolo is destemmed; a cold soak before fermentation is an option to build what colour the grape can give.
From here the maceration regime decides the style.
Fermentation and maceration — the central fork
Ferment warm (28–31 °C) and manage the cap. The traditional style uses a long, often submerged-cap maceration of weeks to months, which — counter-intuitively — softens the tannin by polymerising it; the modern style uses a shorter maceration, sometimes a rotofermenter, for a softer, fruitier, earlier-drinking wine.
Either way the aim is to extract and then tame the tannin without pulling green astringency.
Yeast and pressing
Robust fermentation, often on indigenous yeast, suits the traditional style. Press after maceration and keep the press wine separate.
Gentle pressing avoids adding hard seed tannin to an already structured wine.
Malolactic fermentation
Full malolactic follows, softening the high acidity and stabilising the wine, usually before or during the move to cask.
Set SO₂ once it completes.
Oak — botti vs barrique
This is the other half of the traditional-modern fork. The traditional style ages in large, old, neutral Slavonian oak casks (botti, 2,000–5,000 L) that give slow oxygenation and almost no oak flavour over long ageing; the modern style uses smaller French barriques with some new oak for a rounder, more overtly oaked wine.
Barolo must age at least 38 months, with at least 18 in wood — so long maturation is not optional, only its vessel is.
Long ageing and colour management
The wine needs years for its tannin to integrate, developing truffle, leather and dried-fruit complexity. Because Nebbiolo is pale and browns easily, handle gently and accept that colour is not a measure of the wine's structure or quality.
Slow, oxidative development in botti (or barrique) is the point, not a risk to be sealed out.
Finishing and bottling
After the long élevage, fine and filter minimally to preserve texture and aroma, and bottle under cork.
A good Barolo then ages for decades in bottle, the ferocious young structure resolving into one of wine's most complex maturities.

Why is Barolo so tannic, and how is the tannin managed?
Nebbiolo is naturally very high in both tannin and acidity. The tannin is tamed by extraction choices and, crucially, by time: a long maceration polymerises the tannin, and the mandatory long ageing softens it. Ripe fruit at harvest is the foundation — unripe Nebbiolo tannin cannot be fixed later.
