Chardonnay — California Style Winemaking Protocol

California Chardonnay is the New World counterpoint to white Burgundy — the same grape and much of the same cellar toolkit, dialled toward richness. Warm-climate ripeness gives ripe stone and tropical fruit and higher alcohol; full malolactic brings buttery diacetyl; generous new oak (often American as well as French) and lees work build a broad, creamy, opulent white.
It is the clearest demonstration of the variety-times-style axis: put next to the Burgundy protocol, the techniques rhyme but every dial is turned up. And there is a modern counter-movement — leaner, less-oaked, partial- or no-malolactic wines that pull back toward tension — so the style dial here is unusually wide, from restrained and balanced to full and buttery.

How this style is made
Viticulture in a warm climate
Ripeness comes easily here, so the vineyard work is about retaining acidity and freshness and avoiding flabby over-ripeness. Cooler sub-regions — Russian River, Carneros, the Sonoma Coast, Santa Barbara — give the balance the best examples rely on.
Canopy and picking decisions set whether the wine leans opulent or restrained before a single cellar choice is made.
Ripeness window and harvest
Pick riper than Burgundy — roughly 23–25.5 °Brix — for the generous, full-bodied style, watching that acidity and pH do not collapse. For the leaner modern style, pick earlier to keep tension and lower alcohol.
The pick is the first and biggest lever between restrained and opulent.
Pressing and settling
Whole-bunch pressing or a gentle crush-and-press both work; handling can be a little less obsessively protective than a thiol white, since the style is not built on fragile aromatics.
Settle lightly, leaving some solids to feed a barrel ferment, as in Burgundy.
Yeast and fermentation
Choose a strain that builds roundness and ripe-fruit esters, or a neutral one, reliable at the higher potential alcohol these musts reach. Barrel fermentation, as in Burgundy, integrates the oak.
Alternatively, a cool tank ferment gives the fresher, more linear modern style.
Malolactic — the buttery dial
Full malolactic is the classic California move, giving the buttery, creamy diacetyl character. Blocking it, or running only partial malolactic, keeps more acidity and a fresher profile — the single biggest stylistic fork in the wine.
Diacetyl is buffered down by ongoing lees contact, so the buttery intensity is a matter of timing and lees as much as of whether malolactic ran.
Lees ageing and bâtonnage
Generous lees ageing with bâtonnage builds the rich, creamy texture the style is known for, releasing mannoproteins and adding weight.
Less lees work, and the wine reads leaner and more mineral — the restrained end of the dial.
Oak — generous, American and/or French
Oak is a feature, not a whisper. New-oak proportions run higher than in Burgundy (often 30–70%), and American oak — sweeter, with vanilla and coconut — is used alongside or instead of French, with medium-plus toast.
The proportion and origin of new oak are the intensity and flavour dials; the restrained style pulls both back.
Acidity adjustment
Warm-climate musts often arrive low in acid and high in pH, so tartaric acid is commonly added to restore balance, freshness and microbial safety — a routine step here that a cool-climate Burgundy rarely needs.
It is one of the clearest technical contrasts between the two homes of the same grape.
Stabilisation and finishing
Stabilise protein with a heat-test-guided bentonite and tartrate by cold or CMC. Blend the barrels, fine and filter gently, and bottle under cork or screwcap.
